Because after yesterday's post, it's just wrong not to give you this recipe.
Pumpkin Chocolate Chip Muffins
3 c. flour
2 c. sugar
2 tbsp. pumpkin pie spice
2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
4 eggs
1 can pumpkin
1 c. melted butter
2 c. semi sweet choc chips
Preheat oven to 350. Mix flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt together in a large bowl. In a separate bowl, mix eggs, pumpkin, and butter. Fold in chocolate chips. Fold in dry ingredients, gradually. Bake for 20-25 minutes.
*I have doubled this recipe, and made it as bread, mini muffins, or mini bread loaves and they're all wonderful. Just adjust your bake time accordingly. The mini muffins are the perfect size to take for a special snack to school for young ones!
Be prepared to have a delicious burst of fall in your mouth.
